Ube Biko
Rice cake or Ube Biko is desset cooked with sugar and coconut milk, two kinds of rice cake..Its one is made of ordinary rice and the other is made of sticky rice. Biko or rice cake but not ordinary rice sticky rice. (Glutinous rice or sticky rice)
Biko and when cooked it with various toppings placed, with coco jam or sweet jam(Coconut Milk Curd)there are just plain sugar or more, depending on the habits of our provinces .
Now is a kind of Biko but I use the rice is just rice colorful red or dark rice..at we'll mix just a little sticky rice .. The rice is cooked me if concentrated to make Biko, is pretty tough so your results better mixed with sticky rice rice..Glutinous rice has many nutrients compared to white rice..pretty yet its color when it is cooked ..
A dreamy dessert or snack perfect with a hot brew.
Ingredients:
1½ cups glutinous rice (malagkit)
1¼ cups granulated white sugar
1¾ cups water
½ cups ube, boiled & mashed or freshly grated purple yam
¼ teaspoon salt.
½ teaspoon ube flavoring
4 cups coconut milk
crushed panutsa and grated cheese for topping
Cooking Procedures:
1. Combine ube, condensada, and Nestle Fresh Milk in a thick saucepan.
2. Cook stirring constantly until slightly thick.
3. Add in malagkit and cook until thick.
4. Transfer to a serving tray lined with banana leaves.
5. Top with crushed panutsa and grated cheddar cheese for topping, if desired.
6. Slice and serve with hot tea, coffee, or chocolate.

Funny how the ingredients and procedure doesn't add up.
